I Have Perfected My Techniques of Seasoning the Boston Butts With A Dry Rub Which I Have Developed, Slowly Cooking Boston Butts To Ensure Tenderness While Not Over-Smoking the Meat, A Common Complaint of Bbq Connoisseurs. I Use A Small Amount of Local Pecan Wood Chips To Ensure A Subtle Hint of Smoke While Not Overpowering the Pork Taste.
